Buffalo Salmon and Almond Stuffed Celery

When you have a craving for buffalo wings but you are trying to be healthy, we give you, Sriracha Salmon, Almond and Blue Cheese Stuffed Celery sticks are a healthy and tasty upgrade over classic Buffalo wings.

Ingredients

1/4 fresh broiled salmon or you  can use cup drained canned salmon 

2 tablespoons blue cheese dressing 

1 teaspoon Sriracha

1 1/2 tablespoons crumbled Blue Cheese

½ cup sriracha toasted almonds (see recipe below)

Garnishes: additional Sriracha and chopped fresh parsley or green onions

2 large celery stalks, cut in half

Directions

Combine salmon, dressing and Sriracha in a small bowl. Spoon into celery stalks. Sprinkle with blue cheese and garnish, as desired.

Ingredients

3 cups raw almonds

1 egg white

2 tbsp sriracha

2 tbsp brown sugar

1 tbsp soy sauce

Instructions

Preheat your oven to 325º and line a sheet pan with parchment paper or a silicon baking mat.

In a medium bowl, whisk the egg whites for about 1 minute, until they are foamy.

Add the sriracha, brown sugar, and soy sauce to the egg white, and whisk until well combined.

Add the almonds and stir to coat. Spread the coated almonds onto the sheet tray in an even layer.

Bake for 20-25 minutes, stirring once, until the almonds are toasted and the most of the liquid in the glaze has evaporated.

Allow the almonds to cool completely, and enjoy! Keep an in airtight container.
